I created a wood-elf ranger, working on Theives' Guild then probably assassin's. All in all I'd say I find it much more immersive than Morrowind (though I can't say why; it seems very similar.) I still don't necessarily like the leveling up system; I get athletics, acrobatics, and sneak way too fast and marksmanship really slow. Of course that's because I'm sneak attack killing almost any enemy and if not pulling out my sword to finish it off. Still, though, I feel like what to me was a horribly slow pace in Morrowind has been alleviated.
Speechcraft as it is is a whole lot better than it just being a number comparison; I'm glad it was changed. Being a thief in general is pretty fun, but I got caught to visit someone in Jail at one point and lost all my stolen armor and weapons, so watch out! The whole thief/assassin thing fits my playstyle much more than I would have guessed; it's just hard to pass up a free 3x damage by hitting sneak before taking the shot.
Graphics are off the charts... It's great to be in some dark dungeon having to cast torchlight to see things then come outside and see a sunset off the side of a mountain. My only real problems graphically are that the far-distant textures just look bad sometimes, and foliage can be too dense. I'm playing the PC version with everything up all the way minus HDR, and I'm happy.
